Research in the wine sector is an important aspect for the development of the economy as this sector has great importance and weight globally because wine is one of the main food products that are marketed and currently exporting.
This paper presents a definition of the product scope of a research infrastructure proposed for aging wine in oak barrels and bottles, whose mission is to cover scientific applications and training of food industry professionals.
The requirements included in the scope of product were obtained by an adaptation of the Total Design method to an infrastructure. From the product scope we propose the infrastructure design to meet the technical requirements for obtaining optimum results.
