| dc.description | La investigación en el sector vitivinícola es un aspecto impulsor para el desarrollo de la economía puesto que dicho sector goza de gran importancia y peso a nivel mundial, siendo uno de los principales productos alimentarios que se comercializan y exportan actualmente. En este trabajo se presenta una definición del alcance de producto para una infraestructura de investigación en crianza de vinos y guarda de botellas, que tiene la misión de cubrir aplicaciones científicas y de formación de profesionales del sector agroalimentario. Los requisitos incluidos en el alcance de producto se han obtenido mediante una adaptación del método Total Design a una infraestructura. A partir del alcance de producto se proponen soluciones en el diseño de la infraestructura para cumplir los requisitos necesarios para la óptima obtención de resultados a partir de la misma. | es_ES |
| dc.description.abstract | Research in the wine sector is an important aspect for the development of the economy as this sector has great importance and weight globally because wine is one of the main food products that are marketed and currently exporting. This paper presents a definition of the product scope of a research infrastructure proposed for aging wine in oak barrels and bottles, whose mission is to cover scientific applications and training of food industry professionals. The requirements included in the scope of product were obtained by an adaptation of the Total Design method to an infrastructure. From the product scope we propose the infrastructure design to meet the technical requirements for obtaining optimum results. | es_ES |
