Bread sector is one of the most important of food industry. Its high production levels has enabled to dedicate much of its benefits to the continuous improvement of its systems and to a greater automation of its production processes. All this promotes the appearance of new occupational hazards, which must be evaluated to avoid work accidents and avoid the damage of workers health. Present work intend to carry out the safety and health study of a company in the precooked bread sector, addressing for this purpose the analysis of the jobs, the main production process machines , and work areas in which they are developed. Identification of the safety and health deficiencies presents in the productive process of the industry, will allow to analyze the occupational risks from the point of view of safety, hygiene and ergonomics, thus performing the initial assessment of occupational hazards, with its subsequent proposal and implementation of preventive and corrective measures in order to maximize the welfare and safety conditions of the company's workers.
