In order to predict the yield of beta-cyanins from Beta vulgaris L., for food use under field conditions, a simple potential equation, Richard's equation and Werker's model were applied in three agroenvironments, and to determine growth curves, development Foliar, biomass and metabolites. Seven performance variables were evaluated: eight field, five abiotic, 22 physical-chemical soil, and two biochemical extraction. The data were also analyzed by main components. The production of betacyanins at root was inversely related to their biomass, which coincides with results of other authors, indicating that the size and weight of beet correlates negatively with the concentration of betacyanins, although these do not report a model for this concentration. The yields of aerial biomass were directly related to those of betacyanins (r2≥0.90), emphasizing that eleven of 17 essential nutrients were determinant. Once the biotic and abiotic factors that affect the root development of betacyanins in the study sites are defined, it is possible to manage, under the applied model, the most significant variables to optimize yield, quality and industrial profitability in each agroenvironment
