The food industry is key to the economic structure of Andalusia, both because of the weight and position of this industry in the economy and its advantages and potential.
The term industry 4.0 corresponds to a new way of organizing the means of production. The "smart factories" are capable of greater adaptability to the needs and production processes, as well as to a more efficient allocation of resources. The new paradigm involves structural changes in key areas of the industry, which will accelerate the innovation-design cycle, bringing the final customer closer to the design phase. The production chain will be faster and more flexible, the connected machines in real time favor the adaptability of the production chain, making it possible to achieve a global traceability, continuous and in real time.
The implementation of the framework proposed by the industry 4.0. it is a necessity for the industry in general, and for the Andalusian food industry in particular, and should be seen as a great opportunity for progress for the sector.
This work constitutes the state of the art, through the bibliographic review, of the application of the paradigm proposed by Industry 4.0 to the food industry.
