| dc.description | La industria alimentaria es clave en la estructura económica de Andalucía, tanto por el peso como por la posición de esta industria en el economía y sus ventajas y potencialidad. El término industria 4.0 corresponde a una nueva manera de organizar los medios de producción. Las «fábricas inteligentes» son capaces de una mayor adaptabilidad a las necesidades y a los procesos de producción, así como a una asignación más eficiente de los recursos. El nuevo paradigma implica cambios estructurales en ámbitos clave de la industria, que acelerarán el ciclo de innovación-diseño, acercando al cliente final a la fase de diseño. La cadena de producción será más rápida y flexible, las máquinas conectadas en tiempo real favorecen la adaptabilidad de la cadena de producción, haciendo posible alcanzar una trazabilidad global, continua y en tiempo real. La implementación del marco propuesto por la industria 4.0. es una necesidad para la industria en general, y para la industria alimentaria andaluza en particular, y debería verse como una gran oportunidad de progreso para el sector. Este trabajo constituye el estado del arte, a través de la revisión bibliográfica, de la aplicación del paradigma propuesto por la Industria 4.0 a la industria alimentaria. | es_ES |
| dc.description.abstract | The food industry is key to the economic structure of Andalusia, both because of the weight and position of this industry in the economy and its advantages and potential. The term industry 4.0 corresponds to a new way of organizing the means of production. The "smart factories" are capable of greater adaptability to the needs and production processes, as well as to a more efficient allocation of resources. The new paradigm involves structural changes in key areas of the industry, which will accelerate the innovation-design cycle, bringing the final customer closer to the design phase. The production chain will be faster and more flexible, the connected machines in real time favor the adaptability of the production chain, making it possible to achieve a global traceability, continuous and in real time. The implementation of the framework proposed by the industry 4.0. it is a necessity for the industry in general, and for the Andalusian food industry in particular, and should be seen as a great opportunity for progress for the sector. This work constitutes the state of the art, through the bibliographic review, of the application of the paradigm proposed by Industry 4.0 to the food industry. | es_ES |
