In the last years, the brewing industry has experienced a remarkable expansion which was clear due to a constant increase. A greater preference of consumers is also observed to craft beers. Consumers, increasingly demanding, appreciate the tastes and flavors that provide this type of beers, as well as appreciate a higher quality with respect to industrial ones. The object of this work is the creation of a microbrewery that it will manufacture different types of craft beer, varieties ale and lager. First it will be described in detail the process of craft brewing production specifying, among others, types of ingredients used as well as the stages of maceration, boiling and fermentation. In addition, it will be described the creation of the company, the economic study, and the design of the production process (set-up and optimization) for the materialization of a craft brewery as main items. Finally, it should be stated that this work was the master science thesis project of chemical engineering degree of the student author as an alternative option of self-employment entrepreneurship at the end of her studies.
