The increasing environmental awareness in society due to the large amount of reported evidences is changing consumer’s mentality, resulting in increasing levels of pressure to the market to produce goods and services with lower environmental burdens. The boom of organic food products is a notorious example of this trend, as those products enjoy high consumer acceptance and buyers are will to pay an extra expense to acquire them. Eco-products have to follow certain verifiable rules and standards to be able to apply for labels and certifications that could be shown to the customer. This paper explores the real environmental implication of one group of organic food products, the bakery, by performing a Life Cycle Assessment to a small producer in the Principality of Asturias that has a certificated organic product line. The study results benchmarks the organic products by comparison with other equivalent products conventionally-produced, and analyzes which are the most harmful stages of the production chain.
