Sechium P. Browne (Chayote) is a neotropical genus comprises ten species, only S. edule (Jacq.) Sw., Has domesticated variants. Its use has been eating, and Mexico is the main producer and exporter. Based on morphological, biochemical, anatomical and genetic characteristics, the stability and facilitate their phenotypic distinction heritability, a conservation plan, research and bioprospecting four species of actions in situ conservation, ex situ characterization, designed and empowerment capacity building for new projects. Field collection was integrated with 245 accessions (12 varietal groups) from Mexican and Central American provinces, supported by in vitro condition. Varieties and hybrids of high yield (bitter, sweets), machine design to increase biosafety exportable chayote, guides international certification processes based on competencies, technological development, and networks of legally registered exporters. Have derived new value-added projects and companies in minimally processed foods, nutraceutical beverages and food supplements that contribute to the treatment of malignant cells in humans and diseases of public interest, through products, therapeutic formulations and patent presentations in Mexico, Europe, India, and the United States. The application of project management skills, facilitated the formation of new value-added products.
