Spain is the largest producer and exporter of olive of the world. The production focuses on large production plants but also in small artisan mills that emphasizes the quality of the product against the high-volume production. This work arises from the need to improve a family artisan production process to obtain olive oil in a small olive oil production plant with a production capacity of approximately 1.000 liters of oil.
The main objective of the work is the design of a improved production process that would help to solve the problems of the current production plant. The selection and plant distribution of the equipment, the adaptation of the existing ones, the design of the production process and air-conditioning installation in order to obtain a high quality oil. A study of safety and health to prevent occupational accidents has been performed. In addition, all wastes have been recovered and managed by a waste disposer.
Finally, it has been studied the investment required to implement the improves proposed and an economic study to estimate profitability of the new production process.
