In a globalized world, consumers demand better quality products and greater shelf life, that´s why the project aims to provide a protein cover with antimicrobials, to retard the time for senescence of fresh Capsicum spp, taking the town of Celaya, Guanajuato as reference, establishing a link with producers-suppliers-institution. The study took place in several stages, first was a qualitative and quantitative analysis of the market, through implementation of surveys to producers of chili and the different dealers and suppliers who work with this product, taking into account also the consumers and acceptance that could be attained with the product above, verifying the existence of an unmet need in terms of quality and price. This study is part of the development of strategies for the biotechnological use of different types of chili (Capsicum spp).
