Dairy production in Ecuador has become an alternative to generate employment in the agricultural sector; However, the per capita consumption in the country for 2015 is 100 liters of milk per inhabitant per year, lower than the international standard established by FEPALE and the World Health Organization, which is 150 liters of milk per inhabitant by year. Therefore, knowing the consumption of milk and dairy products at the Universidad Técnica del Norte, is one of the objectives of this research, whose purpose is to develop guidelines based on scientific and technical evidence regarding the reality of nutritional food consumption in the the university's teaching and student group, a task of vital importance, in order to establish food policies within the institution.
Latin America, in general, is facing permanent urban growth, within this Ecuador, according to the Population and Housing Census of 2010, the urban population is 9,090,786 inhabitants, and the rural population of 5,392,713 inhabitants; what makes presume that the desruralización has influenced to the change in the alimentary pattern and the styles of life of the population.
