dc.descriptionLos métodos convencionales (químicos, físicos o biológicos) de limpieza y desinfección de equipos y superficies son eficaces para el control de bacterias en estado libre (o estado planctónico). Sin embargo, en numerosas ocasiones son ineficaces para la eliminación de biofilms maduros, ya que las células que componen un biofilm son más resistentes a diferentes condiciones de estrés y agentes antimicrobianos que las células en estado libre. Por tanto, una vez que se forma un biofilm, las bacterias en éste son extremadamente difíciles de eliminar. El control de la formación de biofilms se está convirtiendo en un foco de atención para los productores de alimentos por los problemas que la colonización persistente genera en las plantas de procesamiento. Debido a la limitación de los métodos anti-biofilm tradicionales, nuevos MÉTODOS ALTERNATIVOS están siendo desarrollados por los investigadores de este ámbito, como los recubrimientos con agentes antimicrobianos o los recubrimientos para la modificación de la topografía o composición físico-química superficial. La presente comunicación describe los actuales métodos de control de biofilm, sus limitaciones e inconvenientes y muestra los nuevos métodos de control (MÉTODOS ALTERNATIVOS), basados entre otras, en la tecnología de la plasma-polimerización empleando equipos de plasma atmosférico.es_ES
dc.description.abstractConventional methods (chemical, physical or biological) of cleaning and disinfection of equipment and surfaces are effective for the control of bacteria in free-living state (or planktonic state). However, in many cases they are ineffective for the elimination of mature biofilms, since the cells that compose a biofilm are more resistant to different stress conditions and antimicrobial agents than the free-living cells. Therefore, once a biofilm is formed, the bacteria in it are extremely difficult to eliminate. For this reason, and because of the problems that the persistent colonization causes in processing plants, the control of the formation of biofilms is becoming the focus of attention for food producers. Due to the limitation of traditional anti-biofilm methods, new ALTERNATIVE METHODS, such as coatings with antimicrobial agents or coatings to modify the topography or the surface physico-chemical composition, are being developed by researchers in this field. The present communication describes the current biofilm control methods, their limitations and drawbacks, and shows the new control methods (ALTERNATIVE METHODS) that are based, among others, on plasma-polymerization technology using atmospheric plasma equipment.es_ES
